Is there a way to get behind he counter and get to his stuff, he has some nice things that aren't available to buy, can I steel them?

no you cant.

you can get close enough to steal some arrows. but the other stuff is just there to tease you.

I'm going to try summoning a Doll behind the counter. I'll let you know how i get on, but it might take a while....

Actually, if you grab a few packages from one of the storage room in the corridor, it shouldn't take too long to get a doll behind the counter.
