For me, it wasn't an adventure game but the adventure game.
I played quite a few: I like Monkey Island 1-3 (a tiny bit of MI 4), for example, but I will never forget Gabriel Knight 1.
A trully mesmerizing game which also had top-notch graphics at that time.
