All of the skills come ones or two's only, except magic.
Magic you have to learn the spell level for each level; which can be up to a maximum of 4 or 6 depending on the camp you join.
You can use any spell scroll as long as you have obtained enough mana skill points to cast the scroll.
NOTE: Spells are not instant in Gothic like in other games, so make sure you are at a somewhat safe distance before you cast a spell, or perch yourself somewhere safe before you cast a spell.
I was usually able to pump two spells out before an enemy was on me.

No, there is no backstab.
If you push the 'B' button on your keyboard in the game it will show you every skill you have and can have.
