Step 1: have more than 1 horse
Step 2: get off horse 1
Step 3: get on horse 2
Step 4: use the horse as you wish

If you leave your other horse in a stable it will stay there. if not it will go to the stable where you bought it. (it will take some time before the horse gets there)
