I've inadvertantly attacked rats, frogs, and just about every wandering, annoying (but plentiful) creature that's found in any sort of wretched abundance. Is there a way of undoing any of this? Most of the time it's just been a result of clicking in a dark area to move there and inadvertantly clicking on an animal.

I've inadvertantly attacked rats, frogs,

If you kill one friendly animal of one specie, all the other animals of the same specie will attack you during a complete act.
In the next ack these animals will stop attacking you.

It's a Larian's joke !

If it is too annoying for you, the only way to stop it, is to load an old savegame.

You can reduce the chance of this happening by clicking the left mouse button and holding it to direct your characters, rather than repeatedly clicking. Also, you should switch combat mode off in areas with a lot of friendly creatures (ie the imp village) or where you have mostly cleared an area but need to go back for something. Some people have even had their lead character stay in peace mode, preferring a couple second delay when encountering opponents to accidentally attacking a neutral creature. Personally, I quicksaved relatively frequently anyway, so it was easier to just reload. After a couple accidental attacks, though, I was a little more careful and didn't have to do much reloading.

In act1 i made a point of fighting ALL neutral critters.... extra XP... from act 2 onwards i chose which ones i wanted to fight....

Tibars i NEVER fought... its too painful to chase them constantly...
Stone biters i never fought.... that beserk spell got the better of me more than a few times.... so i left them alone....

I normally chose the creatures that was NOT 8 levels weaker than me.... so that i can get XP... if not, i stayed friendly to them.

Since i played hardcore most of the time, getting XP was vital for me especially in the beginning.

Your existence alone, is excuse enough for the creation of the entire universe… Il you my darling Jeanne-Dré 
