During on one of my breathtaking adventures...lol, I rescued Penumbra. Afterwards, I met Ciruna or w/e her name is, the "Master Summoner". Well.. I got the book from Penumbra and I noticed something when I opened the book: A picture of some monster was drawn on it, along with some symbols I believe. Now she'll teach me what? to summon the creature drawn in the book if I get the items for her? If so, another thing: I remember seeing a picture of another creature in another book I found laying around. Would she teach me how to summon the creature on the book I found if I get an extra potion and the talking tree wood for her?

Corinna will teach you a level of Banish for helping her. While this is a bit disappointing, you can't really expect too much more considering her competency level.
Incidentally, save the game before you talk to Corinna to give her all the items she requires for the summoning.

The pictures you can find in various books are of creatures you may encounter at some point in the game. The runes can be deciphered to reveal a description of the image, a message or even an easter egg (Marian, one of the graphics guys at Larian, added the URL to his website).

Ohh another question, I didnt summon the deamon yet, well Corina rather. Is the deamon summoning a one time thing or is it a skill I learn which I can use througout the rest of the game?

Corrina summoning the demon is a one time event. The level of Banish she will teach you after that is permanent. How much you use it will depend on whether or not you use Aura of Command on summoned or resurrected creatures to get them to follow you around.
