If you search online you can probably find sheet music already done up for at least some of the songs you want.
Yes but whats the fun in that? I just summon them up from my head, then write them out. It's a challenge and since you are writing it out of the notes you hear in your mind, its kinda like writing a story or poem, but your not really completely making it yourself.
