There is a utility for the music files. For the sound effects you would have to either manually extract them or use an audio editor to begin recording, start the game, trigger the sound effect (with the music and ambient volume levels set to zero), quit (or alt-tab out), then trim the recorded sound to just the effect you want and save it.

Divine Divinity Music Extractor by BrainBox.
You will need an audio player with ogg format support, such as Zinf or Winamp.

See also Divine Divinity music and the composer's website: Kirill Pokrovsky (lots of music there).

Audacity - "Audacity is a free, easy-to-use audio editor and recorder for Windows, Mac OS X, GNU/Linux, and other operating systems."
