I don't know about you guys, but for the most part I found this game pretty easy, but then I did everything I could before going to next part of the story. I have now beat it once on normal and once on hard.
-Warriors stats should be almost all strength I find. Vit is not that important and only increases health, while strength increases damage, health regen, and melee resistance.(also, dex does nothing for you as a warrior, unless you want to use a bow as well)
-I never made a mage or ranger, but I did make a warrior/mage combo my second time and that made the game even easier, even on hard. I went about 20 vit with somewhere around 80 in each of strength and intel I believe(can't remember exact choices).
And always have health potions, ALWAYS and be not afraid to spam them. Throughout the game I always tried to have 30 to 40 health potions on me and I spammed the b-jesus out of them. Also remember that if you really need it rejuv and health potions stack and you can drink one of each.
Try exploring everywhere and keep your lv up, also kill most monsters before you turn in your quests, because every time you lv up you gain less ex from monsters, but the same for quests, so if you turn your quest in early and then kill the monsters, you lose a significant amount of exp from each of those monsters that you could have gotten at a lower lv, so always try to stay in the same lv as the monsters will be fighting, maybe a lb or 2 higher if you have trouble
