Sorry for the late reply, I was away for the a little while, visiting relatives.
I found that it had the same issue on my relatives xbox and couldn't get it to display properly, so I returned it to the store and swapped it for a new copy, which works properly [I uninstalled / reinstalled on my xbox first]. I guess the disc must have had some kind of weird production error which was causing it to display oddly. I didn't take a screenshot first though, sorry.
I have noticed my screen still doesn't look the same as Dungeon Masters - my hotkeys rest on the bottom of the screen, not above it. Here's a screenshot of how it looks now (sorry for the quality, I had to use my cellphone and it has an automatic flash) -

While it doesn't look the same as Dungeon Masters, I am very happy with it now (can see everything), and really enjoying the game - loving the humour. In fact, I think I'm going to have to try and find the first one when I finish this one.
