I have noticed that I come across various types of ore throughout the valley. What do you do with the ore types you find. In other games they can be used to forge new swords for your character. Thank you in advance for any help.

Ore and gems are required for enchantments, which can be used to add various bonuses to equipment that have enchantment slots (Increased Damage, Life Line, Poison Aura, etc). You also need the formula and an enchanter (the first is available after you get access to the full Broken Valley, and is reachable from about level 12, or so). You can remove enchantments on equipment, as well, which will give you the formula if you do not already have it (you do not recover the ingredients).
Similarly, plants can be used to make potions, if you have the formula and talk to an alchemist (the first available is in the starting town in Broken Valley).

Other materials for less enchantments can be sold. I used to hoard the materials myself but found that they only serve to take up valuable storage space. Once you reach the battle tower the materials become irrelevant since you can send other servants to gather them for you.

The only material in limited supply is Malachite gem (not ore), never sell them! Always buy them when you have an opportunity. They are required for all level 10 (best) enchantments.
