I only played through the game once, on normal difficulty (I found it normal, hard in a couple places, tending to fairly easy late in the game). I don't recall anyone else reporting that easy mode was more difficult.
Did you ever try returning to the battle tower from the dragon sections of the Hall of Echoes? Maybe that would get the game to reset something.
At level 35 the Memory Eaters shouldn't have been doing that much damage, and their attacks should not home in any more than other types of ranged attacks. A few people have had trouble there (ie
Another..Hall of Echoes question), but I'm not sure if they were getting the same damage.
Did you ever try sending a save to Larian? If the problem was in the save, rather than the game itself, maybe they could fix it, or wipe out the Memory Eaters.
There was a bug in DKS (fixed in the patch) where certain opponents could have over-powered attacks. Someone mentioned using CheatEngine to freeze their health until they got past that fight. There may be trainers that would be easier to use than CheatEngine.
