I also had some weirdness with Simeon.
The log mentioned I had 2 and could give them, while only having 1 (I just received, the other got used in an enchantment).
So I go there, give him the one, mission accomplished. :?
I think it incorrectly tries to detect 2 'new' gems since the quest started, instead of actually having 2 gems.
