There was originally going to be a swamp in D2:ED (
screenshot 588KB) as well as an area containing elves and dwarves (possibly even the same map as the swamp), but that got cut during development.
Larian hasn't released much information about Project E yet, other than it having a top down camera view and continuing the Divinity plot. I'd be surprised if there weren't other races in it, though.
