Why don't you just start the game with the character you wish and experiment? You are asking things which are really subjective mainly. As for the catacombs, they are big, and you need to explore them thoroughly. I suggest you explore the area, all areas and solve every quest you can, and then leave Aleroth. The best level to leave Aleroth is the highest you can get, and yet some orcs will still be tough. It's just a game, don't get so wound up about it, or else you'll miss half the fun.

ok well I found the best way to get throught the catacombs was to first get my level up as high as I could doing quests and what not as well as geting as many potions, armor and what ever else I could get my hands on. now I got throught eh catacombs doing a few tricks number one is singling out enemys take em on one at a time if you can, if you get swarmed run also try to get your self a bow. If I remember I found a pretty good bow either in the catacombs or in the town before I went down. once you get a decient bow you can take on some of the larger enemys down below, just keep out of there range and shoot one or two arrows at em and then run again. you can whitle some of the larger zombies down this way as well as the gouls. now I didn't do this myself as I had no idea that I could but you can use the pyramide to give your self an easy escape when ever your geting swamped. (I belive you get this when you meet your wizard protector for the first time but it's been a while since I did this part of the quest. anyways drop the pyramid beside the bed in the house you start in and then click on it to use it. it'll take you in to a part of the dungeon where you'll get swarmed by zombies so just pick up the other pyramid tout suite put it in yoru inventory and get back to the bed. from then on when ever your in trouble you can warp back to the bed for healing and what not. I'm not sure what level I left at I just left when there was nothing left for me to do there. oh and remember that when you meet george for the first time he goes in to his bedroom to wait for you to show you his "plant" while he's in there... rob his ass blind and then sell back to him anything you don't want. free weapons and armor always comes in handy. as for the best to start with I like the survivor myself cause I love steeling stuff... I hate to pay for anything that I can get for free. but that's kind of up to you just go with what feels comfortable.

if practice makes perfect but no ones perfect then why even bother?

The 'best' class is subjective, but for help deciding, check out differences between classes. Based on your user name, I'd think you would be partial to survivors.

A bow at the start of the game can make things a little easier on you against tough opponents.

If you don't mind spoilers, check out Early Starting Tips or Starter Tips? (spoilers).

Another really great thing about choosing the Survivor class as a base for your character is the 'Super speed bug'.
To use it, get hold of a frog statuette (You'll be able to buy one later in the game) then use the survivor's 'special' move and crouch.
While you're crouched, open your inventory and click on the frog statuette to polymorph into a frog (sorry, I can't remember if it's a left or right click, you'll have to experiment).
Run around like a mad thing until all your stamina runs out, then click on the frog statuette again to polymorph back into human form. Then right click on yourself to stand up again. You should now be moving at super speed!
Simply because of this marvelous exploit, I use the survivor class as the base for all my character builds, whether they be a mage, warrior or thief. Otherwise the tediously slow running speed really drives me up the wall.

Don't mind me.......I'm not really here!

Statuettes are dropped randomly by monsters, but pretty rarely. There are a couple merchants who can sell them, once you leave Aleroth and reach the next populated area. For the start of the game, you'll have to make due with just running.
