Level what? You mean Elona's dungeon as in after doing one of the quests that give you an invitation to Stormfist castle, going there, doing stuff and leaving?
You must have skipped doing the quests and catacombs in Aleroth and most of the stuff on the way to the castle to only be level 3.
If you are referring to the catacombs, then check back with George periodically for equipment upgrades (merchant inventories reset every 10-15 minutes, depending on the NPC), trade crappy loot for potions, etc. You can leave Aleroth and level up a bit outside. The orcs get stronger and are in larger groups if you go too far south, so clear around the east/west and north of the village first.
If you started over you could get to level 4 in Aleroth before even entering the catacombs, defeating a hostile opponent in town. You can defeat him on level 3, as well, which would be a little easier, but you wouldn't get quite as much experience points for it.
You can meet the zombie Jake twice in Aleroth, once at the graveyard and once in the cellar of his house nearby. On level 1, if you kill Jake (which requires a fair bit of hit and run with a bow or a little bit with Meteorstrike) it will give you enough experience to reach level 3; killing him a second time would get you to level 4. In the graveyard, read the tombstones...
[spoiler]Place the flowers on Jake's grave (drag and drop from his wife's grave) to get him to show up there. Just entering the cellar of his house (there may be boxes or packages stacked on or in front of the hatch) will trigger his appearance there.

Early Starter Tips (NON-Spoiler Version)If you really did mean Iona's dungeon, then some maps should help:
level 1 (with the exit),
starting cell level and levels 2-4 (optional)
Do you have a save from before entering the castle?
If you did a quest for the cook, he would have given you a strange spice bottle which is actually a shadow potion. That would allow you to become invisible to opponents, as long as you don't get too close to light sources (you can put torches out with Telekinesis, etc), open doors or make a direct attack on an opponent. There is one door on the way to the exit that you need to pull a lever to open, but a couple shadow potions could get you to the exit (I assume if you were playing survivor you would have tried the Sneak special move).
On the main level after you get your stuff back, the exit stairs up are to the far west. You can read a scroll on a pedestal to open the lower levels, but they are optional, and you can return for them later.
You could use
DAD's item editor or the
Divine Divinity Item Editor to give a crappy weapon a large damage/stat/etc boost, so you can simply toss/sell the weapon after you get out of the dungeon. DAD's editor requires Visual Basic files which may not be included or installed in Win7; the other editor has slightly fewer features (though would do what you need), but will work fine.
Alternately, you could teleport to the exit, take the stairs up to get a quest, and head back to areas suited for your level.
Teleporting Anywhere, via hex editorIf and when you return to the dungeon after hex editing out, there is one locked door that has a lever to open on the opposite side of the wall you are on. Level 1 of Telekinesis is enough to pull the lever (it might be possible to toss a teleporter stone through the door).
As a warrior I maxed Telekinesis with purchased skill books. It comes in handy once in awhile for grabbing loot, etc (there is some minor loot in cells you can not reach otherwise, something in the sewer you either need Telekinesis to reach or toss a teleporter stone down in order to get close enough to pick up normally, etc).
