The story has changed greatly. At one point, you used to be fighting against the forces of the One God religion, led by the evil Aurora. Now, there's no mention of that religion, and Aurora was your mother who was murdered.
I'm sure that there probably were plans to have AI Dragons, but I suspect Larian realized how difficult it would be to try and get them to work.
