If you run your mouse cursor over an item / chest / NPC merchant, or hit the Alt key nearby, the stats / contents / inventory will be set (merchant inventories reset about every 10 to 15 minutes, depending on the NPC, though they can hang on to some stuff you sell them, which stay at the top).
iZakaroN's SaveEditor (or from
Kiya's site, with description) can edit your own skills, but there isn't an editor that can change skills on equipment (DAD's editor only modifies weapon skills, IIRC).

What did you finish the game as? (spoiler warning, of course), but most just mentioned their level, stats and maybe skills.
With equipment bonuses I generally preferred primary stats to vitality/mana bonuses, but I wouldn't turn my nose up at the latter. I hung on to charms to use when I got better equipment (since they can not be removed), but by the time I had good enough equipment I didn't need any extra bonuses. I only used one charm my first game (a gold strength charm dropped by the dragon rider that Zandalor kills near the start of the game, which let me equip the two handed bastard sword dropped by the knight near Stormfist castle a couple levels earlier than would have otherwise been the case; I went up a level, put all the stat points into strength and use the charm in order to meet the strength requirement).
You can use charms all of the same type.
Once you have enough hit points that you can not be killed by a couple attacks from a strong opponent, then a few extra
restoration potions can get you though any difficult situations (obviously if you start doing so frequently you should boost vitality a little more). For a warrior I would focus more on strength and agility (on average, most warriors end up about 2 parts strength, 2 agility and 1 constitution).
