At the beginning of my game I neglected agility a bit to focus on strength and constitution, then when I had enough hit points I got my agility up.

A little while after finishing the game I loaded my last save to check my stats with and without equipment, and figured WTH, I might as well try killing the end boss again barehanded without armour. It took 106 minor restoration potions and a couple minutes, but I was successful (444 Vitality).

The game tends to get easier as it progresses, so if you don't have too many problems with some of the bosses during the main plot quests earlier in the game, you shouldn't for the end of the game, either (unless you skip a lot of the side quests and exploring, and get to the end at a relatively low level).

Resistances are not a straight percentage (between Magic Barrier and equipment bonuses I got two up to 95, and one to 110 at the end of the game), but effectively you don't take much damage once they get close to 100. I don't think boosting resistances over 100 would be a very wise use of limited charm slots.

There is no cap for stats. Once you are killing common opponents with a single blow most of the time, boosting strength for the damage bonus may not be the best use of your stat points or charms, but there isn't a cutoff where a warrior shouldn't put more points into strength.

A pure mage does just need strength for armour requirements (once it is high enough to carry a reasonable amount of loot). There are mithril breastplates in the game with fairly high armour and low strength requirements, but getting it to about 65 would allow more options.
Mages should primarily be doing damage with spells, or a bow when they need to conserve mana, unless you want to make a battle mage type build suitable for melee or magic.

Intelligence should be the main stat for a mage (though I don't generally play mages in single character games).
