Sure, all that stuff is on the nice-to-have list, no question about it. But time is growing shorter, and every new system has to be designed, implemented, tested, balanced, and bugfixed.

Oh, I'm quite aware of that. Hence why I said for a possible expansion. Also, if the editor is as versatile as I hope, the modding community will be rich with this sort of stuff as well.

I also thought that fishing is gonna be in. Why not make fishing spots in rivers and ponds marked by swimming fish or bubble ripples that work the same way as conainers, and from which you can randomly get a fish, loot (like old boot, bag of coins etc) or nothing? I was excited when I saw the fishing rods and then disappointed when I realized it couldn't be used for fishing. As the game already has cooking recipes which provide temporary buffs, it makes sense that players would be able to equip a fishing rod and catch fish as part of this system. I'm still hoping it makes it into the game, but as others have pointed out there's not much development time left and lots left to do.

well without comming out with a wide and complicated process, why not just creat a fishing skill that once learned allow you to fish in every water (not only "fishing spots") and a random table of objects you can get, it is easy and a part of funny side-mecanisms

if not in the final games, maybe in a mod we can get fishing too. however it could work simple like digging. Right click, a sound effect and a little text what we managed to catch. Sometimes boots or clothes too. Or a bit more complex with a little dexterity-based puzzle...
