Is there any way for me to adjust the font sizes for Journals and the Chat/Combat Logs and the Overhead Dialogues?

I am vision impaired/legally blind. I tend to play either on really high resolutions (2560x1600) and use huge fonts, or I play on a really really low resolution so I can read the text.

I must admit I'm struggling quite a lot with the Journals - I really want to immerse myself in this world and I just need a few points of font adjustment!

For example in Journals, I imagine instead of taking up 1 page or 2 pages they might take up 3 or 4 if I made the text bigger etc?

Unfortunately not. The UI was not designed to be scalable. There were requests for that when the alpha started, and since, but by then it would have been a lot of work to go back and redesign it. It is possible mods might be able to do something, but the UI wasn't designed to be moddable, either.
