Nope, the Alt key is not on the list of configurable controls.
Oddly enough, under Controls it looks like there is one clickable tab, labelled "General".
Since a one-tab tabset is pretty useless, it makes me wonder what other tabs used to be there/are there in the dev version/might be there in the future.
Either way, if you don't like a game feature that other people do, and you aren't forced to use it: don't use it.
Don't try to strip it away from other people who might not share your vision of the game. (Or, if you prefer, call it "Larian's vision". Same thing really, when you're demanding they kill things you don't approve of.)
Chopsticks should be an achievement. Not sure how you'd demonstrate that you qualify, but "where there's a will..."
