Unfortunately, no. The EE does not support cross platform co-op.

Does this mean no PC to Mac and/or no PC to Xbox One (PS4, etc...)

Also will couch coop work on PC? Does it require 2 controllers?

Multiplayer is supported between Windows, Mac and Linux, but not between consoles or console to PC.

Local co-op on PC does require 2 controllers.
