How do you manage all that stuff? Is there a bank or something else where I can deposit all items I don't want to carry and don't want to sell?

Use barrels, Boxes and backpacks to sort things out but there is no bank unless you just grab a chest set it up in a house and use that for your storage

You can pick up these items and keep them in your inventory

You also get a chest per character when you unlock the 2nd room in your homestead. I have been storing stuff that I don't need on me there

I use different baskets and sacks to manage my inventory. They weigh a lot less then barrels and boxes.
