Here's a thread where people (myself included) are discussing this:
"So how does Constitution work?" A couple things I would need to know would be the difficulty you are playing on and if you are using any mods. Also, you would need to check the health "gained from constitution". This can be found when you mouse over your characters health in the Inventory screen.
