Okay, so I've met Dreavan, and given him his red ore to get the forge working. I've got a couple of enchantment formulas in my inventory, one of which I have all the materials for. But when I try to get him to enchant something, it tells me I have no armour, equipment or weapons in my inventory which needless to say isn't true. What am I supposed to do?

You need to have equipment with empty enchantment slots to enchant. Try selecting Disenchant first; that will give you a list of any equipment you have with enchantments slots (for example, Derk, the blacksmith in the Broken Valley village, sells a couple of unique pieces of equipment with filled enchantment slots: a bow named Ranger's Rest and the shield Knight Protector), followed by equipment without enchantment slots.
Once you have at least one piece of equipment with at least one open enchantment slot, choosing Enchant will also give you a list of equipment, with whatever has an open slot listed at the top, and everything else below.
Removing an enchantment from something will give you that enchantment formula, if you don't already have it, but you do not recover any ingredients.
Potion and enchantment formula can be 'given' to the alchemist and enchanter (any left in your inventory after going into the alchemy or enchantment functions will be duplicates, and can be sold). Same for creature parts, though they can get added to the necromancer's list from any trade window, as well. I kept a list of the enchantment and potion formula I had acquired, as well as the best creature parts found, so I could sell off any duplicate formula sooner, or any lesser parts.

Thanks for your response, but I'm afraid I'm still stuck. When i disenchant it shows all my weapons and armor as being full, even though many of them say they have empty enchantment slots in their description. So while I can disenchant some things, I still can't enchant. The only change is now my enchantment formulas have disappeared from my inventory.

The enchantment formula are suppose to disappear. You'll have access to them once you get the enchant function working, and those formula will remain available for other enchanters later in the game. Actually, once you take over the battle tower (at a character level in the high teens or early twenties) you'll be able to use the machine there directly, without talking to the enchanter.
Are you sure you have equipment with enchantment slots, rather than charm slots? If there are any with enchantment slots, the equipment should be at the top of the Disenchantment list, with the proportion of filled and total enchantment slots shown to the right (it would be 0/1 or 1/1 for anything you've bought or found when you first reach the enchanter, and presumably not 0/1 or enchanting should work). Equipment with filled enchantment slots are shown in white text, while equipment with all empty enchantment slots or no enchantment slots are shown in light grey. Equipment without enchantment slots have nothing to the right of the name.
If you've disenchanted something, it should show up with a 0/1 in the Enchantment list, and you should be able to see the available enchantments, even if you don't have the ingredients.

Ah, I didn't realize that charm slots and enchantment slots were different things. I'm not sure I've actually seen any equipment with empty enchantment slots, then. Or are you supposed to disenchant stuff so you can re-enchant it with the enchantment of your choice?

The first equipment you find with enchantment slots will probably have them filled, but you'll start finding some with open slots, as well. Check out Derk's equipment offerings for the unique items I mentioned above the next time you're in the village, for what enchantment slots should look like.
Generally, you will eventually remove most enchantments and replace them with ones suited to your preferences or needs at the time. Most level 10 enchantments and all healing aura enchantments require a moderately rare malachite gem to enchant, so usually at the start of the game you should leave healing aura as they are, unless you don't need the equipment but want the enchantment formula (though since they all require malachite gems, you might want to ignore lower level formula and just wait until you can get level 10, or 9 if that takes awhile). There are a couple malachite gems you can find or buy fairly early, though.
After you take over the battle tower you can re-enchant everything whenever you upgrade equipment with little to no effort. Before then enchantment ingredients will be limited, so you'll need to be a little more conservative. For example, if you find a new piece of armour with Life Line 4, and you have the formula for level 6, you might want to hold off until your next upgrade to use your limited ingredients, since level 4 to 6 isn't a huge difference, considering the next piece of armour you upgrade is probably not going to have Life Line at all. That said, I didn't have too much trouble keeping Life Line on armour and Static Charge on jewellery, and only checked vendors for ingredients a couple times.
