If I get the Kickstarter Collector's Edition physical version that's $125 and the shipping costs to EU are $15, should I pledge $140 or are the shipping costs paid separately?

Kickstarter should automatically adjust your pledge to include shipping costs, so you'd choose 125 but end up with 140 anyway.

I'm pretty sure it doesn't, then again I've never taken a physical tier.

But everyone always says to manually keep the pledge at the right level and make sure you pick the wrong tier; so I'll pass that info along.

Nah it definitely does. Well it does for me - I pick up say the 200 tiers, it will automatically consider I pledged 215 (+15 to France ).
So in the OP example, if his pledge isn't adjusted to 140, there probably is an issue and he should indeed manually the shipping costs
