I beat the game when it was first released, so I am well aware of what I'm doing...or, at least I thought I was. Every single time I engage a zombie type enemy, they "bleed" poison everywhere, and just heal themselves. It's an absurd struggle to kill a single one. I thought using spells and crushing weapons didn't cause them to "bleed", but that hasn't seemed to work. Tactical mode is new and different, but playing so cautious to not die, and seeing enemies auto heal, seems a bit excessive. What am I doing wrong?

Personally I don't like to be next to them (unless they are knocked down and I have a good weapon), so I just nuke them from afar (and I try to freeze them, I think being frozen prevent them from bleeding). Making them walk in fire is effective aswell.

It was like this in the original too. Oil and fire works best against zombies, although any element's non-poison damage spell would be able to damage them without spilling their poison all over the ground (ie blitz bolt).
