I'm not sure if Game Master mode will allow you to create custom summon spells to give to the players, but that would be cool.

Like a spell to summon Skeleton Archer or summon Cow or even summon a character of a playable race that you can alter in the character creator.

I think that last one would be super useful if you wanted to make a quest where you help a ghost and then get a spell to be able to summon them in battle or something like that (just like Nick in Orignal Sin 1)

Probably, but if you want an actual new skill instead of just something fudged on the fly by the GM, I think you'll need to use the editor to create a custom spellbook.
