Digging around in the files, there's some skillsets for the undead race(s):

Judging from that, it seems that you'll pick a pre-undead race, and as undead, you'll be able to polymorph into a "living" form, so people don't attack you on sight.
The
Play Dead ability works, and is pretty hilarious - You pretend to die, and enemies end combat with you. Even if you've angered them enough to make them attack you, they cease combat and won't attack you again until provoked (on the normal NPCs that is). I didn't test it against regular enemies.
There's also an "UNDEAD" tag, with the description:
Source addicts pining for a Utopian future, the Undead are apex predators who move amongst the other races unseen.
Another thing to note: You can add the shaper mask to your inventory with some file tweaks as well, and it grants these abilities:

Shout_PolymorphIntoDwarf
Shout_PolymorphIntoLizard
Shout_PolymorphIntoElf
With the mask, you can transform into any of the 4 races. You gain their talents and abilities when you switch as well. Taking the mask off resets you back to your actual race.
So that's probably how it'll go for the undead race at release, ability-wise. No idea what talents they may have, or what the story is. The shaper mask is also really cool. I'm looking forward to obtaining that.
