Well, don't forget that undead take damage from healing (even while transformed, I believe). That is a massive drawback. Poison healing makes up for that some, but it will still be a big inconvenience and threat from enemies. I'm not sure if you can hide your undeadiness in combat though and hide the fact that healing damages you. That will definitely be very strong if you can.
