The Knight is the two-handed damage dealer in the "Warrior" branch. For me a Knight would be more the armoured shielded guy, therefore I questioned the name. Does not matter at all however, I never look at the names, only the skills etc.
You can of course customize the companions currently at the moment you recruit them. However you can only take the starting "classes" for them with a predefined set. So if you want Ifan be a two-handed Warfare damage dealer, you can make him a "Knight". Which is actually quite good because it has the talent "Opportunist", allowing additional attacks of opportune. Quite strong in a melee group.
If you want him to be a ranger and take "Ranger" as class, you get the talent "Arrow Recovery" Which is ... meh. So I always take "Wizard" for my ranger, to get the talent "Far Out Man". Which is kind of unimmersive to have to use a mage class for a Finesse based char.
Being possibly able to recruit a fully customizable non-origin henchman is quite nice on the one hand. On the other hand you miss a lot of background story. I would opt for fully customizable origin companions. Wether at recruiting or after Act 1, I don't mind.
