I agree 100% with you on classes that they are just predefined sets of skill points, game is in general classless game they said that several times in different videos and streams.
The companions with origin stories only have locked races and sex. All other stuff are free for customization. I think that you just miss on origin stories of the other characters you still get your origin story developed as you play.
