Well Early Access only has the first 4 levels worth of spells.

About 6-8 skills per tree...

I honestly have no idea. It is very possible there are LESS spells as there will likely be a nuke taken to the Summons, shields, and avatars.

Then there are skills that have been folded into each other.

-First Aid is combined with Doctor and Cure Poison.
-Fortitude is likewise combined with a few other skills

I THINK this game will have more, I know they shown us ALL the skill icons, so we could count those.

if we trust the picture posted, it was about 200 skills without the racial skills, if I recall well.
DOS:EE has about 140.

And yeah some skills in DOS that were too situational (cure poison with a touch range ...) got merged and improved with other spells.
It is possible a specific spec line has a bit less skills but overall you have more spells in the game.
You are more encouraged to multispec as well as you don't have minimum stat requirements to successfully cast a spells. So even if one spec line has 15 skills instead of 18. You can more easily find skills elsewhere.

The DOS:EE wiki lists 107 skills. Which seems low, but I can't remember other skills that are missing from their list.

For DOS2, the game description on steam says this: "The next generation of turn-based combat. Revamped action point system, AI 2.0., new elemental combos, over 200 skills, height advantage… and much, much more." As others have mentioned, on the undead reveal stream they showed all the skill icons in GM mode and there were well over 200 (230-240 iirc)

You can count the skills with the divinity planner character which has all skills.
As a gross estimate let say it's minimum 12 skills (5 in a spec allows you to learn 12 skills total) + a few more because I remember you have to choose, you could not learn all skills in a tree for let say 4 extra you can't learn. With 8 spec lines.
8*16 = 128 skills roughtly Give or take 5. Maybe my previous estimation was too generous. it is still minimum 120+ skill to maybe 130+.

As for the GM more, I'd be hesitant to count them because some of them might be restricted to monster, or some would be linked to the story line like in DOS1 with Death Knight bane, so fairly sure it's 200+ from the specs. I would not really suggest it would be much higher just to be safe (don't forget the racial skills as well).
And if it is, great, more spells!

In one of the videos at Larian Swen talked to one of his slave monkeys, uh, employees, about skills where they said that there are more than 700 skillsets in the game, from which about 230 are player related skills.
