..since undead has the talent "Undead: Undead lets you heal from poison, but regular healing will damage you instead". Does healing from blood (leech) count as "regular healing", or can undead use leech for healing?

Undead can use leech for healing, yes. They also heal from the Necromancer spells / skill passive as well.
