Hi, I still used sneaking, you just have to game it a little bit:
Sneak behind NPC->pickpocket him->Immedietly open inventory, and toss your stolen items on the ground. Wait for him to check you, he wont find anything->pickup your skillbooks and learn them - or sell them to different trader
