So I managed to save the dwarf. I got him low then broken the chains, though it seemed a bit inconsistent. I'm not sure if you have to break the chains while he's on low hp AND has his armor broken. I'm playing a solo game so I cast Bless on my char which seemed to prevent the demon from controlling my one char. Hope this helps!
