I don't think I've seen an enemy caster use a poison attack on my undead chars so far, but they will readily use healing spells to hurt them even though their faces are covered. Of course, 9 times out of 10 a poison puddle goes boom as soon as you make one for yourself, so I'm not sure undead is worth it, except for the feign death ability.
