...where are the recipes I learned stored? I know the crafting guide is up, but under which menu can I find the ones I unlocked ingame?

If you can not find the button to open your crafting menu in the keybindings: Right click a crafting item and click 'Combine', then in top of the Combination screen there will be 3 tabs, one is for crafting recipes. All your recipes that you know are stored here for automatic crafting. Make note of the tick-box that lets you choose between available recipes (recipes you know have the resources for), and all recipes (recipes you know but do not currently have the resources for).
