I actually like the Memory system in DOS 2, but I would be okay with going back to DOS 1 EE's skill slot system with a couple of changes:
1) If it gave a couple more slots at higher levels. Master level costs 5 points and gives you 0 extra Novice and Adept slots. It should give at least +1 to each.
2) When you unmemorize a skill, it does into your "unmemorized" category, like DOS 2, instead of being completely deleted and forcing you to re-buy skill books.

As per the "builds", it was actually much better and simple in the first one. I find the new system to give too much freedom (weird I know), my mage knows a whole lot of spells from each schools and does not feel like a geomancer anymore.
That's entirely your own choice, though. Nothing is stopping you from only taking Geomancer skills if you want.
