Check if have Windows Defender controlled folder access turned on (it is in "Windows Security" > "Virus and threat protection" > "Manage ransomware protection"
If you do and haven't allowed the game access to documents folder you get lots of error like this :

You can either turn off controlled folder access or make an exception for "<Wherever>\Divinity Original Sin 2 Definitive Edition\DefEd\bin\EoCApp.exe" by clicking on "Allow an app through controlled folder access" link on the same page.
If it isn't Windows Defender it could be some other anti-ransomware doing the same thing.
