I'm not too sure, maybe 10 or 15 minutes real time would be enough to reset it. Hitting alt or running your mouse over him will set his inventory, so as long as you quick save before doing so, you can repeatedly quick load to get new items. I did this a few time looking for spell books, but I'm not sure how long it would take to get a specific spell bonus.
