Well, I haven't played those so I can't comment. FPS ain't my thing.

Deus Ex is First Person RPG with a sci-fi setting.
Thief 2 is a First Person Sneaker. On higher levels you are not allowed to kill so the only thing you shoot are rope and water arrows.
