Jeremy Soule is persona non grata nowadays. And rightfully so. You can still admire the quality of his music of course.
Pillars of Eternity is a great game according to its metascore. Yet personal tastes do differ. I personally didn't like D:OS I and II too much but I wouldn't say that they are not good. They obviously are great for other players. So maybe only speak for yourself?
BG3 has been in serious development for what: 8 months now? It uses music that fluently changes and adapts to the actions on screen.
Music is one of the last things that get finished during development, especially with such an "adaptive" approach. Yet you expect the music of pre-alpha BG3 to meet the quality of a finalized BGI and II? I would understand if you somehow had access to the bits and parts of pre-alpha BGI and II music and compare it with pre-alpha BG III - but I presume you have not..?
