Well, I could have told him "no" in the first place, and I suspect nothing would have happened then other than continuing the trip with a hungry vampire in tow. The agreement was that he'd get a sip and then stop. Naturally, once he got going he ignored the agreement, and that's where the Persuasion check came in.
