I'm a huge fan of geomancy builds and earth feels like a terribly underrepresented element in the PHB alone. EE added some simply fantastic options for low level play that I think could work well mechanically. The main ones I have in mind are:
Mold Earth: It terms of current gameplay, I think this could be represented by just creating a 5ft x 5ft stone that could block line of sight, but crawled/jumped on for height (or perhaps cast under oneself for the same purpose, or a second version that creates some hindering terrain.
Earth Tremor: creates hindering terrain in 10ft radius around caster and does damage and knocks down per description
Maximillian's Earthen Grasp: This is where it gets a bit harder. I saw another post that recommended grappling, which I do think a 5e game would feel lacking without, which would give a mechanical representation of the restrained condition (perhaps it's in somewhere, but I haven't seen it). With the restrained condition in, the spell is easy to model. Perhaps just ignore the ability to move the hand to a new target (even thought this would be cool).
Wall of Sand: Easily modeled: blocks line of sight and blinds those inside.
