When you're sitting at the table, it's easy to say "my halfling barbarian grapples with Ogre's arm". It's not so easy when you have to depict that with models and animations for a billion different combinations of creatures.
Yeah grappling for sure is missing, lots of monsters are great grapplers and that's their appeal, as well as you can create a character just to grapple others and have fun.
You have jump, shove, help...but yet you forgot GRAPPLE!

Absolutely. They have it planned (I think), as one of the Ranger types allows for those you restrain to have a harder time escaping. Right now that only works for things like Ensnaring Strike. I think they'll add traps and grappling to round this out.

Could maybe circumvent the animations problem with a special effect that shows two characters are locked together in a grapple. Not the most realistic, but perhaps better than no grapple at all

I mean, just because it is challenging doesn't mean it can't or shouldn't be done. The game is based on 5e, Larian and WotC committed to that, so grappling--a base 5e rule--should be in the game.

It always comes down to how much resources would be required to achieve something vs how important that something is. If a multitude of animations for all the varied scenarios are a priority, then I don’t think we would end up having grapple in the game. Too much work for a minor feature. If a less resource-demanding way can be used, then we might. It’s not a simple matter of should or should not.
Grapple is a bit more complex, but would add some spice to the game. As an Action, NOT a Bonus Action. Already shove as a bonus action can be OP when you are near pitfalls.
I know they are planning to do some way to restrain targets as when you make a Ranger one of the options specifices that you are better at restraining targets.
