The fire spitting gargoyle heads at the beginning of the Underdark come close to killing me. Is there a trick to avoiding them?

The way I did it was coming back with a full party and enough perception checks to spot all six of the gas vents on the floor. Then move vases or chests on top of each one. That stops the entire floor from igniting when the traps are triggered.

Then I took the party out of the room to the north (I think?), came back with my MC and opened the sarcophagus for the loot. The gargoyles shot fire arrows but didn't hit that spot, and with no gas vents the floor doesn't catch on fire.

You might be able to disarm all the gargoyle traps, but I didn't try that and trap disarm kits are rare.

That isn't at the Underdark entrance, that's at the start of the game.

Assuming you're talking about the Selune Temple entrance to the Underdark, OP, there's a lever
at the very top of the temple
that will disable the turrets.

Big hint, in these areas, that everyone forgets. Its dark. Even with "Darkvision" you will have problems seeing things. Make sure you take a torch (Dip it into fire to light it, and you can leave it in inventory til needed).

Once you can see well enough to find all of the traps (Plates and Gargoyles) you have two choices, 3 if you make the roll to find the button that shuts off traps.
Disarm them, requires Disarm Trap kit, but if you screw up a roll you break the kit. You probably only have 1 or 2 of these at this point, so if you try, make sure to use "Guidance" to help your odds.
You can also "Block" everything. Put big crates over the gas traps, and vases in the path of fire of the darts.
