It was arguably my least favorite encounter so far, and incidentally difficulty wasn't really the reason for it.

I generally didn't like how it looked (possibly the worst model and animation set for a monster in early access), how it played out in terms of believability (jumping twenty meters, doing weird comet impact effects and so on... those didn't look like the moves i expected by a minotaur) and how out of nowhere it came from.
Everything about this felt... Unpolished.
