Its just a little bit of extra special effect to make them more scary - to have them behave differently then just ordinary humans or humanoids or other less special creatures. They are basically giants when compared to our characters. Monster giants. Down in the Underdark where things are extra weird. It fits.

The game is not direct transcription of DnD rules.

Hook Horrors also jump a very similar distance. These are special monsters.

There really is no need to go into this kind of overblown screaming about it.

Show me in the monster manual where Minotaurs have 100 feet jump distance and il agree with you

How about, just stop changing the monster's attacks in general? Minotaurs have a charge that is very strong but no jump. Hook horrors also do not have a jump attack. Bulettes DO have a powerful jump attack, but THEY DO NOT spit acid. And those are just off the top of my head.

Also, as far as monster movement in general goes. I've repeatedly had monsters stand on top of each other or move through their allies in combat, but any space between the players that isn't almost twice the size of their bubble causes my other characters to run all the way around both of them.
